- 200 ml Kefir
- 50 ml extra-virgin olive oil
- I squeeze of lime juice
- 1 crushed garlic clove
- I handful of chopped parsley
- 1handful of chopped coriander, parsley, mint, dill or any combination…
- Pinch of salt and black pepper
Whizz ingredients together using a stick blender and serve over salads. Can also be used with hot food, as long as you put it on just as you are eating it to preserve some of the probiotic microbes. Good with roasted vegetables, curries, chilli too.
