As fermented vegetables go, Curtido is a delicious half-way house. It has a cabbage and carrot base, flavoured with lime oregano and just a hint of chilli, so it’s ideal if you’re dipping your toes in for the first time. It originates from El Salvador and is the ideal accompaniment for any dish, especially anything with a South American theme.
