We’ve spiced this white cabbage sauerkraut with cranberries, both fresh and dried, bramley apples, oranges, cinnamon, cloves, star anise, ginger. Curiously, when fermented, raw cranberries become crunchy and palatable, losing their incredibly sour edge. Handmade, as ever, and for sale in the fermentary, in 250g jars also available for local delivery and further afield in sealed sachets that don’t leak.
A note about our sachets: we’ll be swapping to compostable ones when our current stocks are used up.
